For the Mashed Potatoes:

  • 4 medium Yukon Gold potatoes (peeled and cubed)
  • 3 tbsp butter (unsalted)
  • ½ cup warm milk or cream
  • 2 cloves garlic (minced, optional)
  • Salt & black pepper to taste
  • 1 tbsp fresh herbs (parsley or chives, chopped, optional)

For the Salmon:

  • 2 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • 1 tsp fresh dill or parsley (chopped, for garnish)

Optional Sauces:

  • 2 tbsp garlic butter sauce
  • 1 tbsp lemon dill sauce

Instructions

  • Prepare the Mashed Potatoes:

    • Peel and chop the potatoes into equal-sized pieces.
    • Boil in salted water for 15-20 minutes until fork-tender.
    • Drain and return to the pot to evaporate excess moisture.
    • Mash with butter, warm milk, and garlic (if using). Season with salt and pepper.
    • Stir in fresh herbs if desired.
  • Cook the Salmon:

    • Pat salmon fillets dry and season with salt, pepper, garlic powder, and lemon juice.
    • Heat olive oil in a pan over medium-high heat.
    • Place salmon skin-side down and cook for 4-5 minutes until crispy.
    • Flip and cook for another 3-4 minutes until the center is just opaque.
  • Serve:

    • Plate the mashed potatoes first, then top with the cooked salmon.
    • Drizzle with garlic butter or lemon dill sauce.
    • Garnish with fresh herbs and enjoy!

Notes

  • For extra creamy mashed potatoes, use Yukon Gold potatoes and warm the milk before adding it.
  • If baking the salmon, preheat the oven to 400°F (200°C) and bake for 12-15 minutes.
  • Want more flavor? Add roasted garlic, parmesan, or fresh herbs to the mashed potatoes.
  • Short on time? You can use store-bought mashed potatoes and focus on making the salmon perfect!
