  • A dash of cayenne pepper (optional)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Wash and peel the sweet potatoes, then cut them into evenly-sized cubes.
  • In a large mixing bowl, combine melted butter (or coconut oil), maple syrup, ground cinnamon, and salt. Whisk until smooth and well-combined.
  • Add the sweet potato cubes to the bowl and toss them until evenly coated with the mixture.
  • Spread the coated sweet potatoes in a single layer on the prepared baking sheet.
  • Place the baking sheet in the oven and roast for 25-30 minutes. Flip the sweet potatoes halfway through to ensure even cooking.
  • If desired, sprinkle chopped nuts over the sweet potatoes during the last 5 minutes of roasting.
  • Once done, remove from the oven and let cool slightly. Serve in a dish and garnish with additional maple syrup or a sprinkle of cinnamon.
