  • 2 large boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 1 cup Marsala wine (or substitute with white grape juice + apple cider vinegar)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 small shallots, diced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • ¼ cup flour (or cornstarch for a gluten-free option)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper, then dredge lightly in flour.
  2. Heat olive oil in a large sauté pan over medium heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same pan, melt butter and sauté garlic, shallots, and mushrooms until golden brown (about 5-7 minutes).
  4. Deglaze the pan with Marsala wine, scraping up any browned bits. Simmer for 2-3 minutes.
  5. Add chicken stock and heavy cream, stirring to combine. Reduce heat and let the sauce thicken for 5-7 minutes. Adjust seasoning with salt and pepper.
  6. Meanwhile, cook fettuccine in a large pot of salted water until al dente. Drain and reserve ½ cup of pasta water.
  7. Return chicken to the pan and spoon sauce over it. Add cooked fettuccine and toss to coat. Adjust sauce consistency with reserved pasta water if needed.
  8. Garnish with fresh parsley and serve hot.

  • For a halal version, substitute Marsala wine with ¾ cup white grape juice mixed with ¼ cup apple cider vinegar.
