Ingredients
For the Batter:

For the Apples:

- 1 teaspoon lemon juice – Prevents apples from browning.
For the Glaze (Optional):
- ½ cup powdered sugar
- 1–2 tablespoons milk (or plant-based alternative)
- ½ teaspoon vanilla extract
Instructions
Preheat & Prep Apples: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Toss diced apples with lemon juice and cinnamon and set aside.
Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Combine Wet Ingredients: In another bowl, whisk eggs, milk, vanilla, brown sugar, and melted butter until smooth.
Make the Batter: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the diced apples.
Shape the Fritters: Drop spoonfuls of batter onto the lined baking sheet, shaping them into small mounds.
Bake: Bake for 18-22 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Prepare the Glaze: Whisk together powdered sugar, milk, and vanilla extract until smooth.
Glaze & Serve: Drizzle the glaze over the warm fritters and let it set. Serve immediately!
Notes
- If you prefer extra crispy baked apple fritters, let them cool for a few minutes and then place them back in the oven at 375°F for 5 minutes.
- For a gluten-free version, use almond flour or gluten-free all-purpose flour.
