  • Author: Jeremy
  • Total Time: 35 minutes
  • Yield: 10 fritters 1x
  • Diet: Vegetarian

Description

These baked apple fritters are soft, fluffy, and packed with warm cinnamon-spiced apples! A healthier take on the classic deep-fried version, they’re oven-baked to perfection and drizzled with a light glaze. Perfect for breakfast, brunch, or a sweet snack!

Ingredients

Scale

For the Batter:

  • 2 cups all-purpose flour – Can substitute with whole wheat flour for a healthier option.
  • 1 ½ teaspoons baking powder – Helps the fritters rise.
  • ½ teaspoon baking soda – Adds lightness and fluffiness.
  • 1 teaspoon ground cinnamon – Adds warm spice flavor.
  • ¼ teaspoon nutmeg – Optional but enhances the taste.
  • ¼ teaspoon salt – Balances the sweetness.
  • 2 large eggs – Can use a flax egg for a vegan alternative.
  • ½ cup milk – Any dairy or non-dairy milk works.
  • 1 teaspoon vanilla extract – Enhances the overall flavor.
  • ⅓ cup brown sugar – Adds deep caramel-like sweetness.
  • 4 tablespoons unsalted butter, melted – Can swap for coconut oil or applesauce.

For the Apples:

  • 2 medium apples (Granny Smith or Honeycrisp) – Peeled, cored, and diced.
  • 1 teaspoon lemon juice – Prevents apples from browning.

For the Glaze (Optional):

  • ½ cup powdered sugar
  • 12 tablespoons milk (or plant-based alternative)
  • ½ teaspoon vanilla extract

Instructions

  • Preheat & Prep Apples: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Toss diced apples with lemon juice and cinnamon and set aside.

  • Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  • Combine Wet Ingredients: In another bowl, whisk eggs, milk, vanilla, brown sugar, and melted butter until smooth.

  • Make the Batter: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the diced apples.

  • Shape the Fritters: Drop spoonfuls of batter onto the lined baking sheet, shaping them into small mounds.

  • Bake: Bake for 18-22 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

  • Prepare the Glaze: Whisk together powdered sugar, milk, and vanilla extract until smooth.

  • Glaze & Serve: Drizzle the glaze over the warm fritters and let it set. Serve immediately!

Notes

  • If you prefer extra crispy baked apple fritters, let them cool for a few minutes and then place them back in the oven at 375°F for 5 minutes.
  • For a gluten-free version, use almond flour or gluten-free all-purpose flour.
  • You can store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • To reheat, bake at 350°F for 5 minutes or microwave for 15-20 seconds.
  • For a healthier glaze, swap powdered sugar for maple syrup mixed with a splash of almond milk.
